I'm considering adding gift cards to my business, and would like to find out if there are any terms & conditions template out there that I can peruse in the implementation.

While I don't have any T&C templates for Gift Cards, if you are thinking of making one, do keep in mind that your own terms need to follow Square's terms for Gift Cards.
