How do I set up classes with variable pricing in Square Up Appointments

I am trying to set up yoga classes via Square - Appointments subscription, with variable prices in the calendar.

Any ideas how to do this?

I have also tried to set up my classes as services, and can list these under appointments succesfully, but then cant have these listed on specific days or times / as per a timetable which is what I need (so figure it wont work this way).

Reason I need variable classes is for discounted rates for my senior / older adult community that come along.
