How do I create a one time use discount or coupon, for a % off a specific item, to use on Square POS when the customer is ordering in-house (not online)?

There are a couple of ways to go about this.

If your coupon is quite literally a one off--specific to one customer one time--the easiest way is to create a discount for it on the dashboard (Dashboard -> Items -> Discounts). Once they've used the discount, you can go back in and delete it. The discount information will still show on all reports.

If you're talking about for a group of your customers, I recommend using Square's marketing emails to send it out. (Dashboard -> Marketing -> Create Campaign) You can attach a coupon with a customized six digit code per person so there won't be any duplicate usage. When one of those coupons comes back in, you'll redeem it by going to Rewards in your POS item library then the Use Code link at the top right.
