Hey @nenanote. So, for each question:

You might want to double-check with your church’s accountant here. While churches are exempt from paying sales tax on most purchases in most states, they are not exempt from the requirement to collect sales tax from anyone who purchases items from them in a retail environment.

If you accountant confirms that you don’t have to collect sales tax in your state, then you can go to your online dashboard > Account & Settings > Business Information > Sales Taxes. Here you can turn off all sales taxes for all items, if you are sure that is the legal thing in your state.

All items in Square are considered sold on the date the transaction is paid. There are no exceptions. You might be able to work around this by using the House Accounts functionality that is an optional part of Square. That would allow you to ring up sales as they happen, charge them to a house account, and then record payments to that house account as they come in.

I have items on consignment in a church bookstore. At the end of each quarter I receive a check for the items that sold. To enter these as cash sales in Square...

is there a way to enter them without tax (church is tax exempt)

and enter (or edit) the actual day they were sold on?
