Hiding modifiers for specific item

Hi,

if I want to set modifiers up for each item so that the staff member can say no x, y, z, is it possible to have one master modifier that I can then hide specific things that aren’t applicable for that item? Or do I need to setup individual modifier groups for each item. I’ve seen in a few places that it should be possible, but I can’t find anywhere that gives me an option to hide or remove them
