There should be a 'case-convert' function with selected text fields in the item edit page!

You are correct, that is currently not possible, but a possible workaround for you would be

EXPORT LIBRARY of your affected items.
Then open the .csv file in Excel.
Insert an empty column next to the column you want to fix the casing on.
In the empty column, type =PROPER() with the appropriate field.
Then copy the value to the original column, overwriting the previously existing data with poper case.
Delete the empty column that you put the formula in.
Reimport the file into your Square item database.

I know this is a bit high level, but if it is an option you want to pursue and have issues, let us know.
