Item Variation Kitchen Display Name

I am on the free square for restaurants subscriptions, and I have a menu item like Tacos which i made a couple variations for meat options (ex. Steak, Chicken,Barbacoa). I dont know if that is better managed with a modifier but what i am trying to do is display to the customer the option and shorten it on the kitchen display name in the variation but it is greyed out and i cant seem to edit it anywhere else. Is this because i am on the free subscription or is that not an editable field and will have to manage meat options with modifiers?

I'm having the same issue. I would like to add something to the kitchen facing name to help with mistakes but do not want the customer to see it. I am unable to make any changes to this.
