How to Manually apply a discount to a category.

I need to Manually apply a discount to a category.

Simple. Not automatic.
Not every transaction. Only to specific customer.

We do not use loyalty or points. We do that in another system that deals with shipping alcohol and excise in all US states.

@Leaderbrand Do you want the discount to only apply to just this customer AND a single category or everything this customer buys?

Ill take a look at a couple of unique things I have done and check and see if it would work for you. I assume you want it to be automatic for that customer?

I would also like to be able to restrict a discount to a category, item and/or time (just like an automatic discount) but it not be automatic.

Real World Use case: We run a cafe and give a discount to our ParkRun customers of 10% off drinks on a Saturday morning from 8:30am-10am. This discount isn't for everyone, so can't be automatic. However, to ensure that it only applies to drinks, and not food, the sales team need to process the food and drinks in a seperate transaction, otherwise the 10% discount will apply to the whole transaction.

We would like to have the discount set up with a rule to apply only to the drinks category, and only between 8:30am-10am when the discount is manually applied.
