Why does the coupon category clear when I add a new Item to that category?

I have a coupon set up which applies a discount to items in a specific category. However, the selected category keeps getting cleared from the coupon periodically so the coupon stops working. It appears to happen every time I add a new item to that category. Has anyone else experienced this or any advice on how to avoid it?
