How can you add a variation to only one option set?

I have 3 option sets and each time I add a variation it makes me add a variation for each option set ending up adding 4 - 5 variations each time I attempt to add one.

Does anyone know a work around to add one variation to only 1 option set at a time?

Do you by chance have a screenshot of what you're talking about?

I'm unsure of what you mean by option sets.
