Modifier Inventory Limits

(After quite a while searching I think this isn't possible, but I thought I'd ask just in case I'm missing something.)

I wan't to sell an item where customers have to pick two variations/modifiers. But for both of these I need to track inventory so I don't oversell.

Basically, I'm selling a kit to knit a toy and I need customers to be able to select the body color (4 different options, each with their own stock levels), and also the hoof color (5 or 6 options, each with limited inventory).

If this was in store retail I'd just ring them up as two different items, but this is online, so I want to make sure customers pick both options, but don't want to oversell. Right now I have the body color set as variations, but if I put the hoof color as a modifier I can't find a way to track those so that I don't oversell.

Is there any way to do this?

This would definitely be more of a feature request so you're not missing anything.

I appreciate the amount of detail listed here so we know how your business is set up and how it could be useful.
