If I get a Square business checking account and a square debit card can I still transfer funds to my personal account?

Yes, you will still be able to transfer funds from you Square Balance to your linked account via manual or instant transfer.

Does it have to be the whole amount or can you take out a portion of the funds in the Square business checking account and transfer it into your personal account?

It can be any amount up to the what is available in your account to transfer out.
